Where has time gone? It seems like one minute I was drafting a post for hummus in the back seat of the car while returning from vacation number one, then packing for vacation number two, and now its the middle of July! I’ll admit that blogging through the summer has been difficult (did I say difficult? I meant impossible). For one thing, its been too darn hot to cook anything, and forget about baking, for another, grilled food can be so uninspiring. It’s not for lack of trying, but every time I would try to post about grilled food, I’d sort through picture after picture of charred meat and veggies, then head to the freezer for a consolatory popsicle. (I’m not the best griller out there). Fortunately, after weeks of eating salads (and charred meat) I grabbed my camera and snapped some pictures of this super easy Caprese salad.
First thing to do is find some good quality tomatoes. If you aren’t growing your own, try your local farmers market, or at the very least, purchase vine-ripened tomatoes from the supermarket – it makes all the difference. Next, get some fresh mozzarella, the kind you grate for pizza just won’t do. If you have an option between fresh cows milk mozz and buffalo milk mozz, go for the buffalo! Now gather some fresh sprigs of basil.
And that’s it! Told ya it was easy.
