Too often I have heard it said that salad is boring, lifeless, green. The late comedian John Pinette said that “Salad is not food, salad comes with the food, salad is the promissory note that food will soon arrive.” He also said that “there is no joy with salad”. Clearly he never met this salad. Boring, lifeless greens have been replaced with tender, pecan crusted chicken with just the right amount of crunch, mixed greens, Bartlett pears, gorgonzola cheese and a creamy lemon vinaigrette. This salad embodies joy.
Seriously, look at this salad! Boring? I think not!
This salad is a meal in itself, and even though you may not be able to pack all of this into a mason jar, the perfect balance of protein, veggies and healthy fats will keep you satiated and feeling good about your food choices.
The secret to the success of this salad lies in the perfectly cooked, pecan crusted chicken, which can also become a meal all by itself. 🙂
